1.

Feelgood mood

Ingredients (serves two):

– 4 OaYeah! fluffy pancakes
– 1 tbsp lemon curd
– 1 tbsp whipped cream or cottage cheese
– 1 handful of raspberries
– 1 handful of blackberries
– 1 tbsp granola

Preparation:

Heat the fluffy pancakes according to the instructions on the packaging.

Make a nice stack of pancakes. Scoop a full tablespoon of whipped cream or cottage cheese onto the top pancake and then add the lemon curd. Spread a handful of raspberries and blackberries over the curd and next to the pancakes. Sprinkle some fresh granola on top for that extra crunch in your feelgood breakfast.

Energy booster

Ingredients (serves one):

– 2 OaYeah! large pancakes
– 1 handful of blueberries
– 1 banana
– 1 tbsp pecan nuts
– 1 tbsp maple syrup
– Pinch of cinnamon

Preparation:

Wash the blueberries and pat them dry. Cut the banana in half and slice it. Heat the large pancakes according to the instructions on the packaging. In the meantime, chop the pecan nuts and roast them briefly in a dry frying pan.

Cover each pancake with half of the sliced banana, blueberries, some of the roasted pecan nuts and roll them up. Pour some maple syrup over it to taste and sprinkle with cinnamon and the rest of the nuts as a finishing touch.

Kick-stack of the day

Ingredients (serves two):

– 4 OaYeah! fluffy pancakes
– 1 egg*
– 1 avocado
– 50gr / 1.76oz of smoked salmon*
– 1 handful of baby spinach
– 2 sprigs of dill
– 2 lemon parts
– Pepper and salt

* Replace the egg and salmon with hummus and dukkah for an even planet-friendlier version of this recipe – it’s just as tasty 

Preparation:

Heat the fluffy pancakes according to the instructions on the packaging. Boil the egg like you prefer (hard boiled or soft boiled). In the meantime, cut the avocado into slices. Wash the spinach and pat it dry.

Stack it up

Grab a nice bowl, put some spinach in. Place the 4 pancakes on top of the spinach and top with the smoked salmon and avocado slices. Season with salt, pepper, fresh dill and a little lemon juice. Cut the egg in half and divide it over the pancakes. Best start of the day!

Hug on a plate

Ingredients (serves two):

– 2 OaYeah! large pancakes
– 1 tbsp coconut yoghurt
– 1 mango
– 1 sprig of fresh mint
– Maple syrup
– 1 tbsp shredded coconut

Preparation:

Heat the big pancakes according to the instructions on the packaging. Peel and deseed the mango. Cut the mango into slices. Cut the fresh mint leaves into little strips.

Spread some coconut yoghurt on each pancake and put the mango slices and fresh mint leaves on top. Fold the pancakes into a triangle. Pour some maple syrup and finish with the shredded coconut and fresh mint leaves.

5.

OaYeah!’s ice ice baby

Ingredients (serves two):

– 4 OaYeah! fluffy pancakes
– 1 scoop of B&J Sundae non-dairy berry revolution ice
– 2 Oreo biscuits
– 1 handful of raspberries
– 1 tbsp chocolate sauce

Preparation:

Take the ice cream out of the freezer. Heat the fluffy pancakes according to the instructions on the packaging.

Cut out a circle in the middle of one of the pancakes with a small glass or knife. Pile up the pancakes and place the one with the hole on top.

Put a generous scoop of ice cream in the middle of the top pancake (the one with the hole in it).

Divide some raspberries over the ice cream and next to the pancakes. Crumble some Oreo biscuits and sprinkle them over the pancake stack. Finish with some delicious chocolate sauce.

6.

Cake for breakfast

Ingredients (serves two):

– 4 OaYeah! fluffy pancakes
– 1 Digestive biscuit (or just choose your favourite type of biscuits)
– 4 tbsp whipped cream
– 1 handful of fresh strawberries
– 4 tsp strawberry jam

*Replace the whipped cream with vegan cream cheese for an even planet-friendlier version of this recipe – it’s just as tasty .

Preparation:

Heat the pancakes according to the instructions on the packaging. Crush the biscuit into coarse crumbs.

Grab 2 plates. Place 2 pancakes on each plate. Brush the pancakes with a spoonful of whipped cream and spread 1 teaspoon of strawberry jam over it. Top the pancakes with the fresh strawberries and finish by sprinkling the biscuit crumbs on top. Happy good morning!
